Sherry Fino's delicate character comes from how it is aged:in a partially-filled barrel, under a layer of misterious yeast. This yeast is known as Flor and forms spontaneously on surface of wine.

Story block

Flor protects the wine from air, imparting aroma and flavour. It consumes alcohol, glycerin, proteins and any residual sugar in the wine. Hence, Fino Sherry is the world's driest wine because it contains zero sugars.

Mysteriously, Flor only grows in Sherry Triangle region. Wine from similar grapes grown outside, aged in the Triangle will taste like Sherry. And wine from inside the Triangle, aged outside, will not.
