All Sherry wines come from the Sherry Triangle: a protected region in the south of Spain embrancing Jerez de la Frontera, Sanlúcar de Barrameda e El Puerto de Santa María.

Only vines with a lifespan of 30 years or more survive in such place where temperatures routinely rise to 38ºC (100ºF). Their short stems hide metres of roots seeking out water far underground.

Vines grow in albariza ground, composed 80% of chalk (and remainder magnesium and clay), the best medium for grape-growing particulary for Finos: the palest, lightest and driest of sherries.
